step-by-step

Let us begin with the citrus sponge baking ritual. Grease a 26 cm springform pan and dust with flour. Grate the zest of your organic orange and squeeze the juice. Cream 125 grams of sweet butter, 100 grams of white sugar, 1 packet of vanilla sugar, the orange zest, and a pinch of salt until pale. Whisk in 2 fresh eggs one after another. Sift 150 grams of pastry flour and 1 teaspoon of baking powder over the bowl, mix with 3 tablespoons of whole milk, and spread flat into the pan. Bake at 175C (350F) for exactly 20 minutes until golden, then let the sponge base cool flat on a wire rack.

Now, handle your precision fruit filleting and velvet yogurt mousse. Soak 10 sheets of gelatin in cold water. Peel 4 sweet oranges completely to remove all white pith, cutting between the membranes to carve out clean fruit fillets. Squeeze the remaining fruits to collect a total of 550 milliliters of orange juice, keeping 300 milliliters separate for the glaze. Mix 300 grams of yogurt, 50 milliliters of juice, 4 tablespoons of orange liqueur, 2 packets of vanilla sugar, and 100 grams of white sugar until smooth. Melt your squeezed gelatin sheets over low heat, whisk into the yogurt mixture, and chill for 10 minutes. Whisk 500 grams of cold heavy cream until stiff, then fold the cream clouds straight into the gelling yogurt cauldron until a uniform mousse builds.

Chef’s Critical Staging Secret: Place the cooled sponge base over a presentation platter and lock a tight adjustable cake ring secure around the borders. Spread one third of your yogurt mousse flat over the base, arrange the orange fillets evenly on top, and pour the remaining mousse straight over the fruits. Smooth the ceiling perfectly flat up to the cake ring walls and chill inside your refrigerator frost lines for a patient minimum of 4 full hours total to let the gelatin lock the layers solid.

Execute your vibrant mirror lacquer glaze and presentation finish. In a small saucepan, combine 1 packet of clear tart glaze powder, 2 tablespoons of white sugar, and your reserved 300 milliliters of fresh orange juice. Bring to a roaring boil over medium-high heat while stirring constantly, cook for 60 final seconds, then pour the hot citrus gel directly over your cold cake ceiling. Chill for 20 minutes to let the mirror stabilize. Whisk your remaining 200 grams of heavy cream until stiff peaks form and fill a pastry bag. Release the cake ring carefully, stamp out decorative white cream cuffs along the borders, and garnish meticulously under fresh kumquat wheels, orange skin strips, and chocolate ornaments. Slice cleanly into 12 wedges, serve cold, and enjoy your holiday dessert paradise!
